[PATCH 02/22] mailmap doc: quote config variables `like.this`

Quote the mailmap.file and mailmap.blob configuration variables as `mailmap.file` and `mailmap.blob`, and link to git-config(1). This is in line with the preferred way of doing this in the rest of our documentation.
